Remember those iconic cosmic brownies from your lunchbox? This homemade version is everything you loved about them — but made with real dark chocolate and a silky ganache that takes the flavor to a completely different level.
What Makes These Brownies Special
- Ultra-fudgy dense center that melts in your mouth
- Silky ganache instead of waxy frosting
- Rainbow candy buttons for that signature cosmic look
- No mixer needed — just one bowl and a whisk
Key Ingredients
The key to ultra-fudgy brownies is more fat than flour. Both melted dark chocolate AND cocoa powder give deep complex flavor. An extra egg yolk makes them denser and chewier. For the ganache, use good quality dark chocolate.
How to Make Them
- Prep: Preheat to 350°F. Line 9×13 pan with parchment.
- Melt: Melt butter + chocolate. Cool 5 min, whisk in sugar, eggs, vanilla.
- Mix: Fold in flour, cocoa, salt until just combined.
- Bake: 22-25 minutes. Center should jiggle slightly.
- Ganache: Heat cream, pour over chocolate, stir smooth after 2 min.
- Finish: Spread ganache, top with candy buttons, refrigerate 30 min then slice.
Tips for Perfect Results
- Do not overbake — slightly underdone center sets perfectly as it cools
- Cool completely before adding ganache
- Use a hot dry knife for clean slices
- Store at room temperature 3 days or fridge up to 1 week
Serving Suggestions
